Prevent 8 out of 10 breakdowns with professional commercial kitchen maintenance

| Author: Maarten Derboven, Projectleider

In a commercial kitchen, everything hinges on speed and reliability. Whether you’re cooking for a school, a care home, a corporate catering service or a restaurant: your equipment must perform when you need it to. At D&L Concepts, we resolve 80 per cent of all issues on our first visit. What makes the difference? It’s down to regular, preventative maintenance. The driving force behind a smooth service. It extends the lifespan of your kitchen, prevents annoying downtime and keeps your costs under control.

What do we mean by ‘proper maintenance’?

Proper maintenance is more than just “a thorough clean”. It’s a combination of daily care and professional checks:

  • Daily and weekly care by your team: cleaning, checking, and minor tasks that slow down wear and tear
  • Regular professional maintenance: thorough technical check-ups, adjustments, descaling and preventative replacements

Think of it like a car: you can keep it clean and check the tyre pressure yourself, but without regular servicing, you’ll run into problems sooner or later. This is doubly true in commercial kitchens, as appliances are often used intensively and under high pressure.

Tip: Be sure to take the maintenance quiz to find out where your problem areas lie!

Case 1: Faulty cold store

We carried out our routine maintenance check on this customer’s refrigeration system. At first glance, everything appeared to be running normally, but upon inspecting the cold store fan, we saw what the problem was: dust build-up, grease deposits and reduced air circulation.

Why is this important? A dirty cold store fan may seem harmless, but the consequences can be far from harmless:

  • Temperature fluctuations that jeopardise food safety
  • Higher energy costs because your compressor has to work harder
  • Increased risk of total failure during peak periods or hot days
  • HACCP issues during inspections due to visible contamination

Solution from D&L Concepts:

We carried out technical and hygiene maintenance:

  • Thorough cleaning of fan blades and grilles
  • Inspection and cleaning of filters and air ducts
  • Check of seals and sensors

The result: The customer can now carry on without any worries, with a cooling system that does exactly what it’s supposed to do. No temperature issues and no unexpected breakdowns. Exactly what preventive maintenance is meant to do: prevent problems rather than solve them.

Case 2: Deep cleaning of a professional kitchen: deep-fat fryer

We carried out a thorough clean and oil change on this customer’s deep-fat fryer. Upon inspecting the tank and heating elements, we noticed clear build-up and burnt residues (a common problem with intensive use).

Why is this important? Changing the frying oil and cleaning your deep-fat fryer regularly may seem like a routine task, but neglect has direct consequences:

  • Longer heat-up times due to build-up on the heating elements
  • Higher energy consumption because the deep-fat fryer has to work harder
  • Changes in taste and colour of your food (darker, less crispy)
  • Increased risk of faults in heating elements and thermostats

We carried out a full service:

  • Frying oil completely changed
  • Tank and heating elements thoroughly cleaned
  • Deposits removed for optimal heat transfer
  • Filters and drain checked

The result: The customer immediately notices the difference in faster heat-up times and more consistent results. The deep-fat fryer is performing as it should again, without wasting any extra energy.

Case 3: Electrical components for commercial kitchens

We carried out an emergency call-out for this customer after an electrical fault began to manifest itself. Upon inspecting the switchboard, we discovered severe overheating of the contactors: burnt connections, melted insulation and blackened components.

Why is this important?

Electrical faults in commercial kitchen equipment often go unnoticed until it is too late, but the consequences can be dramatic:

  • Acute fire hazard due to overheating and short circuits
  • Risk of electrocution for your kitchen staff
  • Insurance issues in the event of damage caused by poor maintenance
  • Domino effect: a single faulty component can take several appliances out of action

Solution from D&L Concepts:

We carried out a full electrical maintenance service:

  • Replacement of all damaged contactors and connections
  • Inspection of all electrical connections and earthing
  • Organisation of cabling in accordance with safety standards
  • Thermographic scan to detect hidden hotspots

The result: Not only has the customer been spared an immediate fire hazard, but they now have an electrical installation that complies with all safety standards.

The impact of D&L on the smooth running of commercial kitchens

At D&L Concepts, we do not rely on one-off interventions, but take a systematic approach. Our maintenance checklists are based on years of practical experience in commercial kitchens throughout Belgium. As a result, we know exactly where to look for both critical and less obvious weak points.

Our intervention figures show:

  • 80% of service calls are resolved immediately on the first visit
  • 98% are permanently resolved after a maximum of two visits

Less downtime, greater certainty. Whilst others are still searching, we have often already found the cause.
